This might be the time for me to start yelling – YOU DON’T NEED A 50 PAGE WEBSITE TO GET STARTED IN AFFILIATE MARKETING!
I only scale up my websites when I find they first CAN rank well in Google and THEN only when they actually make money $$$.

I going to start a one page website, but I wonder if I do make it to the top of the search engine, do I add more content. If so, what kind of content do I add.

@Richard,
Richard, one page of content is all you need; focused on one valuable keyword term or phrase. All of your focus should be on link building after that to get the site to #1 in Google; when and if it makes money you can begin adding more NOT until then.
